Recipe: Greek Salad

Greek Salad is my all time favorite thing to eat no matter what. My favorite is the one at Pappadeaux! This one is kind of like that but obviously not quite as amazing! I only make this in a single serving because no one else at my house likes it except Gemma... I chop up all of the veggies and toss them together in a large bowl then add the cheese and dressing. It's quick and easy to make in advance.

Here's what you need for the salad:

I use Romaine Hearts but you can use your favorite lettuce
Kalamata Olives
Grape Tomatoes
Feta or Crumbled Goat Cheese
Red Onions thinly sliced
English Cucumbers
Capers (totally optional)

For the Dressing:

1/2 tsp Garlic Powder
1 tsp Oregano
1/2 tsp dried Basil
1 tsp salt
1/2 tsp black pepper
1/2 Olive Oil
5 tbsp Red Wine Vinegar
1/4 cup Lemon Juice
(if you don't want to make your own dressing Ken's Greek is really good, just add some Lemon Juice on top!)

Enjoy!
XOXO
Miranda
